I opened my first sandwich café. In Liverpool. In 1992.
Basement sandwich bars abounded with vinyl floors and chipped formica counters, selling white bread with processed fillings.
Pret à Manger had 2 branches. In London.
London was a different country to most Liverpudlians. There was no social media then. No photos to share of my vision of checked ceramic tiles and steel display cabinets
Everyone thought I was mad.
I was told “No one will pay 95p for an egg mayonnaise sandwich” (the average price was 65p)

What I knew about my fellow citizens was that they liked value for money. At whatever level. And they knew about quality.
So I sat out the naysayers. And one by one they fell.
A free range egg sandwich with homemade mayonnaise and artisan bread grew from a weekly treat to a daily one.
